Butternut squash n Red Pepper

Ingredients

  • 1 whole butternut squash peeled deseeded and chopped into rough cubes
  • 1 large onion diced
  • 1 large red pepper chopped
  • 2 cloves garlic crushed
  • 4 chicken oxo cubes
  • salt and pepper to taste
  • 1.7 – 2 litres boiling water

Instructions

  1. fry squash pepper onion and garlic in a little olive oil for five mins.

  2. add boiling water and stock cubes and a little salt and pepper

  3. simmer for 30 mins

  4. blend in a food processor or use a hand blender

  5. may serve with a dash of cream on the top if desired
