Ingredients
- 1 whole butternut squash peeled deseeded and chopped into rough cubes
- 1 large onion diced
- 1 large red pepper chopped
- 2 cloves garlic crushed
- 4 chicken oxo cubes
- salt and pepper to taste
- 1.7 – 2 litres boiling water
Instructions
fry squash pepper onion and garlic in a little olive oil for five mins.
add boiling water and stock cubes and a little salt and pepper
simmer for 30 mins
blend in a food processor or use a hand blender
may serve with a dash of cream on the top if desired
