Step 1:

  • fry squash pepper onion and garlic in a little olive oil for five mins.
  • Step 2:

  • add boiling water and stock cubes and a little salt and pepper
  • Step 3:

  • simmer for 30 mins
  • Step 4:

  • blend in a food processor or use a hand blender
  • Step 5:

  • may serve with a dash of cream on the top if desired
