Ingredients

  • 1 butternut squash
  • 1 red pepper
  • 2 fresh red chilli’s (or chilli powder/flakes/tobasco/hot sauce)
  • 1 onion
  • 3 gloves of garlic
  • 1 bay leaf
  • mixed italian herbs
  • 1 vegetable stock cube
  • 2 pints water

Instructions

  1. chop all veg

  2. fry oinions and garlic on a medium heat in a big saucepan for 5 minutes

  3. add water and vegetable sotck

  4. add veg, bay leaf and herbs

  5. boil until butternut squash is soft

  6. blitz using a hand help blender, or in a food processor or something similar
