Butternut squash soup soup By Guest Contributor April 16, 2011 Soup Preparation Time Cook Time Servings0Ingredients1 butternut squash1 red pepper2 fresh red chilli’s (or chilli powder/flakes/tobasco/hot sauce)1 onion3 gloves of garlic1 bay leafmixed italian herbs1 vegetable stock cube2 pints waterInstructions Step 1: chop all veg Step 2: fry oinions and garlic on a medium heat in a big saucepan for 5 minutes Step 3: add water and vegetable sotck Step 4: add veg, bay leaf and herbs Step 5: boil until butternut squash is soft Step 6: blitz using a hand help blender, or in a food processor or something similar
