Step 1: Bring a small pan of water to the boil and add lentils, let simmer 15 minutes, then drain.
Step 3: in a very large pan bring vegetable stock to the boil and add all vegetables, tinned tomatoes (including the juice) and the tsp of sugar, let it re-boil then turn down heat to simmer for 1 hour and 45 minutes.
Step 5: mix in herbs and spices combining well.
Step 10: -serve with a crusty bread if you desire.
Step 11: -to spice it up, add 2 medium chili peppers and 1/2 tsp more of cayenne pepper.
