Cajun Chicken Burgers

Ingredients
- One chicken breast per person
- large burger buns
- cooking oil
- for marinading the chicken you can just use a couple of tbl spoonfuls of cajun spice or use the following:
- cumin
- coriander (ground)
- parpika
- cayenne pepper (chilli powder works too)
- any side you fancy. Chips, sauteed potatos or potato salad go nicely.
Instructions
1) for each burger you make, mix half a spoonfull of each spice into a shallow dish.
2) butterfly cut the chicken and coat the chicken breast lightly with oil. Cover with the spices.
3) heat some oil in a pan to a high heat and fry the chicken for about 5-7 minutes on each side.
4) assemble the burgers with lettuce, cucumber, tomatoes and onion. Cheese and mayonaise are optional but go great.
5) serve immediately with any side you find tasty.
