Camarones a la Diabla Ingredients
- 1 lb of large shrimp, peeled and deveined
- 2 tbsp of olive oil
- 1/2 tsp of salt
- 1/4 tsp of black pepper
- 3 dried guajillo chiles
- 2 dried arbol chiles
- 2 tomatoes, diced
- 1/2 onion, diced
- 3 garlic cloves, minced
- 1 cup of water
- 1 tbsp of lime juice
- 1 tbsp of chopped cilantro for garnish
Camarones a la Diabla Instructions
- Place the dried guajillo and arbol chiles in a bowl of warm water. Let them soak for about 10 minutes so they soften.
- Once the chiles are soft, take them out of the water and put them in a blender.
- Add the diced tomatoes, minced garlic, and water, then blend until the mixture is smooth.
- Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 5 minutes, or until it turns soft and translucent.
- Pour the blended chile mixture into the skillet with the onions. Stir well and let the sauce simmer for about 5 minutes.
- Season the shrimp with salt and black pepper. Add them to the skillet and cook for around 4 minutes, until the shrimp are pink and fully cooked.
- Stir in the lime juice and mix everything one last time.
- Top with chopped cilantro before serving.
