STEP 1:

Pull your puff pastry out of the freezer to thaw for at least 40 minutes and preheat the oven to 400℉

STEP 2:

Line 2 baking sheets with parchment and drizzle 6 puddles of olive oil with a sprinkle of salt where each piece of pastry will go

STEP 3:

Place thin slices of tomato and mozzarella over the puddles and top with a teaspoon of ribboned basil

Cut each sheet of pastry dough into 6 even rectangles and place one over each gathering of tomato and mozzarella

STEP 5:

Pinch the sides down against the parchment paper and place into the oven for 15 minutes or until golden brown

STEP 6:

Optional: Brush an egg wash over the top of the pastry before putting them in the oven for a shinier golden color

STEP 7:

Once golden, remove from the oven and allow to cool for 10 minutes

STEP 8:

Carefully flip your pastries and place them onto a serving dish

On two circles of honey, place down approx. four apple slices, or enough to cover the circles of honey. On top of those, place a rectangle of brie. 3. On the two circles of balsamic glaze, place approx. four slices of strawberries, or enough to cover the circles of balsamic glaze. 5. Place a rectangle of raw puff pastry on top of the six piles and gently press around the sides to tuck in all the ingredients. 6. In a small bowl, whisk together the egg plus a splash of water.
