Step 1:

  • Boil a pot of water with some salt and about a tblsp of olive oil. Add tagliatelle and cook as normal.
  • Step 2:

  • Cut bacon up into small pieces (can literally be torn up using hands) Buy lean bacon if you can or make sure you take off extra fat.
  • Step 3:

  • Fry the bacon in the bottom of a small pot (with some olive oil if you wish) until almost cooked then add sliced leeks.
  • Step 4:

  • When leeks are soft, add all of the soft cheese, stir in and add some double cream until you reach desired consistency. Salt to taste.
  • Step 5:

  • When your sauce is ready, add to drained pasta and serve. My friends love this and 4 people can eat for under a fiver!
