Almonds3/4 separated eggs100 gr. self raisning flower200 gr. sugar1 pinch of saltgrated zest of 1 lemonOVEN 180 .C/350 .F/GAS MARK 4Instructions Step 1: GREASE A TIN WITH BUTTER Step 2: FINELY CHOP THE CARROTS IN A BLENDER AND PUT THEM INTO A MIXING BOWL Step 3: FINELY CHOP THE ALMONDS IN A BLENDER AND PUT THEM IN A BOWL TOGETHER WITH THE CARROTS Step 4: ADD THE FLOUR,SUGAR AND A PINCH OF SALT AND MIX TOGETHER Step 5: BEAT THE EGG WHITES UNTIL STIFF,THEN FOLD THEM TOGETHER INTO THE MIXTURE WITH THE EGG YOLKS Step 6: STIRR WELL UNTIL YOU HAVE A NICE CONSISTENCY THEN SPRINKLE SOME LEMON ZEST THE MIX AGAIN Step 7: POUR IN TO THE BAKING TIN AND BAKE IN THE CENTRE OF A PREHEATED OVEN FOR ABOUT 20 MINUTES.
