Grate one cauliflower (or alternatively you can buy cauliflower ‘cous cous’ from some shops now)
Step 2:
Put the cauliflower into a microwavable bowl, cover with a plate and put in for 4 minute
Step 3:
Let the cauliflower cool down a bit then put it in a tea towel and strain all the moisture out (give it a good effort, it’s surprising how much water comes out!)

Put the cauliflower back into a bowl and add a clove of garlic, some salt and pepper and a teaspoon of oregano. Finally add about a cup of mozzarella and then mix into a paste.

Preheat the oven to 200 degrees celsius and prepare a baking dish with greaseproof paper rubbing oil onto the top and below the sheet

Add your ‘dough’ mixture onto the baking dish and shape into a pizza, folding up some crusts if you want to

Bake till it goes golden brown then add the passata mixture and cheese and whatever toppings you like on your pizza. Put in for another 5-10 minutes and voila, a cauliflower pizza!
