Cheap Spinach & Ricotta Pasta

A cheaper alternative to a delicious iron-rich meal

Ingredients

  • Frozen Spinach
  • Cheese Spread (Darylea/Laughing cow or similar)
  • Garlic
  • Butter
  • Milk
  • Pasta

Instructions

  1. I found this works best using frozen spinach =]

  2. 1- Boil water for the pasta, add pasta and leave to cook according to the packaging. Meanwhile melt a small amount of butter in a pan and add 1 crushed clove of garlic, heat for a short while

  3. 2- Add 50/75g of spinach per person to the butter. Heat until the spinach has thawed and heated through.

  4. 3- Now add 1-2 triangles/2-3tbsp of cheese spread (I use darylea triangles) And continuously stir until the spread has liquified and mixed with the spinach, add a splash of milk to thin it slightly if required

  5. 4- Season to taste, Salt, pepper and a little dried basil are good choices.

  6. 5- Drain the pasta and stir in the spinach mixture

  7. 6- Serve (Topped with cheese if you like)
