Cheese and Courgette Muffins

Ingredients
- 225g self raising flour
- 50ml oil
- 175ml semi skimmed milk
- 1 egg
- 100g grated cheddar cheese
- 1 courgette
- 2 table spoons black pepper
- 9 muffin cases
- 3-4 table spoons of salt
- 1/4 yellow or red or green peppers
Instructions
Preheat oven to 200`c or gas mark 6
Place the muffin cases in a muffin tin
Cut the ends of the courgette and peppers
Cut the pepper
Grate the courgette and cheese and put in a dish
Add flour, eggs, milk, oil, and pepper
Mix all of the ingredients together to a smooth mixture
Divide the mixture equally into the muffin cases
Bake for 20 mins
Allow to cool on a cooling rack
Top tips: try using a grated carrot instead of a courgette. Add finely sliced ginger for a different flavour. Sprinkle in a bit of grilled bacon. Even add a sprinkle of parsley.
