Ingredients
- Salad rocket – a handful
- rice – 1 cup
- olive oil – 2 tablespoons
- tortilla cheese dip – 2-3 tablespoons
- water – 2 cups
- vegetable stock/bouillon seasoning – 1 teaspoon
Instructions
Wonder what to eat on a hot summer day or what to carry for a summer picnic? Here is a rice dish that can be a salad as well when you add more rockets.
1. Cook the rice with water and vegetable stock seasoning.
2. To cooked rice (pour away any excess water), add olive oil, cheese dip and mix well.
3. Add rockets (full leaves without chopping) and mix well.
4. Refrigerate and serve cold. Best enjoyed when served cold.
