Cheesy peppers

Ingredients

  • Bell peppers 3 or 4
  • Mozzarella
  • olive oil
  • salt and pepper
  • Basil

Instructions

  1. Cut all the peppers in half and carefully cut out the stem and seeds

  2. Cut up the mozzarella into small pieces and place inside the peppers

  3. Mix olive oil, salt, pepper and basil together

  4. Drizzle the olive oil mixture over the peppers

  5. Place onto baking tray. Can be cooked in the oven (20-30 min) or under the grill (10-20 min)

  6. Take out of the oven when cheese is melted and slightly brown. Enjoy as a light snack or starter
