cherry muffin

juicy cherries in a moist muffin

Ingredients

• 4oz butter or margarine
• 4 oz caster sugar
• 4oz self raising flour
• 2 handfuls of fresh cherries
• 1/2 tbsp ground cinnamon
• two large eggs
• 1/2 tbsp of milk

Instructions

STEP 1:

cream the butter and sugar until pale. beat the eggs lightly and add them bit by bit and mix well every time a bit is added. seive the flour into the mixture and fold in using a large metal spoon. de-pip and quarter all the cherries and add them to the mix and stir in and add the cinnamon stir in well. you may need to add the milk. put the mixture into twelve muffin cases half full and put in the oven at 180 for 15 minutes. and enjoy. : )
