Instructions

STEP 1:

in a pan heat the oil and add the onion and garlic.

STEP 2:

simmer for 2 mins.

STEP 3:

add the tomatoes, basil, oregano and salt and pepper and simmer for a further 3 mins.

STEP 4:

next add the soft cheese and stir until it makes a creamy pinky/orange coloured mixture.

STEP 5:

STEP 6:

place the chicken breasts into an oven proof dish and score.

STEP 7:

pour the mixture over the top of the chicken and place into oven for 25 mins or until chicken is cooked.

best served with roast potatoes.
