Chicken and Chestnut Soup

Very thick and yummy soup

Ingredients

  • cooked (boiled tends to be best) and shelled chestnuts – try not to eat too many!
  • Chicken (i tend to use the bones of a cooked chicken I’ve bought plus some extra meat)
  • onions
  • Chicken stock
  • any veg for extra bulk and flavour – carrots etc

Instructions

  1. gently fry the onions in the bottom of a big pan

  2. add the extra veg and cook untill a little soft

  3. pour in the stock and add the chicken and chestnuts

  4. simmer for an hour or so, stirring occaisionally

  5. blend together

  6. you should end up with a really thick broth – my favourite for the winter!
