Chicken and Coconut curry

Ingredients

  • 2 Chicken or Turkey breasts
  • 1 can of Coconut milk
  • 2 small Onions
  • hand full of Mushrooms
  • Curry Powder
  • any spices such as Cumin you might have at the back of your cupboard

Instructions

  1. chop up your Onions and Mushrooms

  2. Pop the meat under the grill or pop it in a pan with a little oil untill cooked through

  3. Add a little oil to a pan and gently fry the onions and mushrooms

  4. Slice the chicken roughly once cooked

  5. Add to the same pan as the veg, pour on all the Coconut milk, plus 2 tablespoons of curry powder.

  6. Add Cumin or chilli etc to taste

  7. Simmer gently for 10 mins and serve with instant rice or chips

  8. Absolute winner!
