Step 1:

  • first cook your chicken in a pan with olive oil until it goes brown
  • Step 2:

  • add the courgettes and beans and cok for 3-4 mins until softened
  • Step 3:

  • in a bowl mix together the roasted red pepper pesto and the mascarpone cheese then pour into the pan and simmer for 5-6 mins whilst stirring occasionally
  • Step 4:

  • whilst doin this cook the pasta according to the packet and add some salt
  • Step 5:

  • drain the pasta when done and add to the chicken add more salt according to your tatse
  • Step 6:

  • put in the fridge whilst making the potatoes so the sauce sets a bit
  • Step 7:

  • peel and chop the potatoes and then put in a pan of boiling water and wait for them to cook, when they are cooked drain them and put them back into the pan
  • Step 8:

  • add a small nob of butter and a dash of milk to make the potatoes creamy and mash together. Then season with salt pepper etc
  • Step 9:

  • then take the pasta out of the fridge and put in an oven proof dish then spread the pototoes on top evenly and top with a sprinkle of cheese put in the oven on about 200degrees and bake for 15-20 mins until the cheese has melted..
