Chicken Burrito Ingredients
- 4 chicken breasts, chopped into chunks
- 1 tin of chopped tomatoes
- 1 tin of mixed beans, drained
- 1 small onion, chopped finely
- 1 garlic clove, chopped finely
- 1/2 chilli (or chilli powder)
- 1/2 red pepper, chopped
- 1/2 green pepper, chopped
- 8 small wraps (or 4 large ones)
- Cheese (optional)
Chicken Burrito Instructions
- Start by heating a small amount of olive oil in a frying pan.
- Add the chicken and onions and fry until they start to brown.
- Add the garlic and chilli (not the chilli powder) and fry for another 2-3 minutes.
- Add the pepper, then beans and tomatoes.
- Fry until it begins to bubble, then turn the heat down (to prevent sticking).
- After a few minutes add salt and pepper to season (add chilli powder now if you did not use a chilli) and stir. Turn off the heat.
- Warm tortilla shells in the microwave (about 20 seconds each).
- Spoon the mixture into the wraps one at a time and wrap up so all the ends are tucked in.
- Serve between four.
- Or alternatively, place into a rectangular casserole dish, grate cheese over the top and warm through in the oven for 5-10 minutes (or until the cheese starts to melt) and serve..
