If you’re looking for a fast, flavorful, customizable, and healthy dish, this burrito bowl is perfect. It’s one of my favorite go-to meals when short on time and the family wants something filling.

This recipe includes a mix of white rice, seasoned chicken, beans, corn, cheese, salsa, and avocado. A perfect blend of health and taste. The luxury is that if someone doesn’t like one of the ingredients, you can easily remove it or replace it with something else. It truly is a dish that takes away a lot of the fuss come dinner.

Burrito Bowl Ingredients

  • 1 cup white rice
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 pound chicken breast, diced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 1 cup salsa
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Burrito Bowl Instructions

  1. Wash the white rice under cold running water until the water looks clear.
  2. Add the rinsed rice and water to a medium saucepan. Bring it to a boil over medium-high heat. Once boiling, turn the heat down to low, cover the pan, and let it simmer for 18 to 20 minutes, or until the water has been absorbed.
  3. As the rice cooks, pour the olive oil into a large skillet and heat it over medium-high heat.
  4. Put the diced chicken into the skillet. Season it with the chili powder, cumin, salt, and pepper. Cook for 5 to 7 minutes, stirring now and then, until the chicken is fully cooked.
  5. Stir the black beans and corn into the skillet with the chicken. Let everything cook together for another 3 to 4 minutes, until heated through.
  6. When the rice is done, fluff it with a fork and spoon it evenly into 4 bowls.
  7. Add the chicken mixture on top of the rice in each bowl. Finish with shredded cheddar cheese, salsa, and diced avocado.
  8. Scatter the chopped cilantro over each bowl and serve with lime wedges on the side.
