Step 1: Ensure chicken if frozen is defrosted.
Step 2: Add about 30-50% of the sachet of fajita seasoning (depending on how spicy you want it!!) to the flour, and mix together. Place on a shallow bowl or plate.
Step 3: Empty the egg into a shallow bowl and beat the **** out of it with a fork for about 30 seconds.
Step 4: Place the breadcrumbs on a seperate plate, and add another 30-50% of the fajita seasoning depending on your liking, mix together.
Step 5: Take your breast of chicken and cut flat in half, you should cut it so you end up with two peices of chicken breast that have the same layout as 2 peices of bread being sandwiched. Best way to do this is lay the chicken on its side and cut down through it.
Step 6: Take each half of the chicken and dip thoroughly in the flour mix, ensuring each peice of it is entirely coated. (now it gets messy so its best to wash your hands between each step)
Step 7: Dip both peices of coated chicken in the beaten egg.
Step 8: Then dip both peices of flour mix + egg coated chicken into the breadcrumbs mixture. Ensure each peice is thoroughly coated and that you havent missed any parts of the chicken. Now it will be dry again and less messy to handle.
Step 9: Place each peice of chicken on a baking tray.
Step 10: Cook in the oven at 160 degrees C for around 35-40 minutes depending on how thick the chicken is. If unsure, cook for 40 minutes. The breadcrumbs will not burn easily so don’t worry, however if they do burn then your chicken is definatly done!
Step 11: When cooked, serve each peice in a bread roll and top with some salsa, or just fried onions and peppers. Ideal with chips!!
