Chicken Noodle Soup

Ingredients
- Serves 2
- 1 x skinless bonless chicken breast
- 900 mls chicken stock (you can get packet liquid stock at 450mls per packet from most supermarkets)
- 50g Rice Noodles
- 1 teaspoon chopped ginger root
- 1 chopped clove garlic
- 2 spring onions
- 2 Teaspoons soy sauce
Instructions
Bring the stock to the boil
Add chicken breast, garlic and ginger
Partially cover and simmer for 20 minutes
After 20 mins remove chicken on to a board and shread into bite size pieces with a fork
Add chicken, spring onions and soy sauce and noodles back to the stock and simmer again for 4-5 minutes or until the noodles are done.
Serve between 2 bowls – tongs are best for getting the noodles out!
