Chicken Noodle Soup

Ingredients

  • Serves 2
  • 1 x skinless bonless chicken breast
  • 900 mls chicken stock (you can get packet liquid stock at 450mls per packet from most supermarkets)
  • 50g Rice Noodles
  • 1 teaspoon chopped ginger root
  • 1 chopped clove garlic
  • 2 spring onions
  • 2 Teaspoons soy sauce

Instructions

  1. Bring the stock to the boil

  2. Add chicken breast, garlic and ginger

  3. Partially cover and simmer for 20 minutes

  4. After 20 mins remove chicken on to a board and shread into bite size pieces with a fork

  5. Add chicken, spring onions and soy sauce and noodles back to the stock and simmer again for 4-5 minutes or until the noodles are done.

  6. Serve between 2 bowls – tongs are best for getting the noodles out!
