Step 1:

  • Bring the stock to the boil

  • Add chicken breast, garlic and ginger

  • Partially cover and simmer for 20 minutes

  • After 20 mins remove chicken on to a board and shread into bite size pieces with a fork
  • Step 8:

  • Step 9:

  • Add chicken, spring onions and soy sauce and noodles back to the stock and simmer again for 4-5 minutes or until the noodles are done.
  • Step 10:

  • Serve between 2 bowls – tongs are best for getting the noodles out!
