Step 1:
Slice up the chicken breasts. Step 2:
Fry in a large pan with a little oil until all surfaces of the chicken are cooked. Step 3:
Add the vegetable stock to a jug of boiling water. Step 4:
Measure out the required amount of rice (do not forget that it expands) Step 5:
Add the rice and the vegetable stock into the pan of chicken. Step 6:
Cover with a pan lid, or stir continuously for around 20 minutes until all liquid has been absorbed by the rice. Step 7:
The rice should now be thick and creamy. Step 8:
Add a handful of peas. Step 9:
Stir in a teaspoon of pesto. Step 10:
Sprinkle a bit of cheese on top.
