Chicken, Rice And Bean Burrito

Ingredients

  • 1/2 cup rice
  • 1tbsp oil
  • 1 small onion (roughly chopped)
  • 1 clove (pressed/finely chopped)
  • 1 cup chicken broth
  • 1 cup of chicken (cooked in strips)
  • 1 tsp salt
  • 1/2 tsp pepper
  • cajun spice mix – to taste
  • 1 can of refried beans (16oz)
  • 6 flour tortillas
  • salsa
  • sour cream
  • guacamole
  • green onions/chives (to garnish)
  • cheese (grated) – optional

Instructions

  1. In a fry pan (needs a lid) saute rice in oil until lightly browned

  2. add onion and garlic, stir until soft

  3. add broth, chicken, salt, pepper and cajun spice

  4. bring to the boil, cover, reduce heat to simmer for

  5. 20minutes

  6. check on rice every 5 minutes and stir if sticking add more water

  7. meanwhile, heat refried beans over low heat stirring frequently and heat tortillas in microwave

  8. to assemble – spread equal amounts of rice mixture and refried beans landscape to you fold ends in pull the tortilla end near you up and over the rice mixture and drag towards then proceed to roll then repeat for others

  9. top with salsa, guacamole, sour cream and garnish with green onions/chives

  10. optional – place wrapped burritos into oven dish ad cover with cheese and bake till melted.
