Step 2: chop up the onion and set aside.
Step 4: with two sauce pans, measure 1 cup of water for 1 cup of rice and 2 1/2 cups of water for the frozen veggies. Put them on the stove and bring them to a boil.
Step 7: on a medium skillet, heat up some cooking oil, and throw in half of the onions. Cut up the chicken breast and throw it in as well, adding seasoning and turning frequently on med-hi heat.
Step 9: when the sauce pans are boiling, put the rice in the 1 cup of boiling water and remove from heat, let it simmer for 6 mins. In the second sauce pan, throw in the frozen veggies and let them cook for 6 mins.
Step 11: the chicken should take a bit longer, like 8 mins.
Step 14: once done, drain the rice and veggies and put them on a plate, season them with salt/pepper, then dump the chicken/onions on top. You can also add the remaining fresh chopped onions.
