Chicken, tomato & pesto pasta

A winner with all! Tasty hot or cold!

Ingredients

• Just as tasty without the chicken if you’re not a meat eater (or simply can’t afford to buy it!)
• Pasta
• Sliced chicken breast (cheaper alternative: precook thighs/legs and tear meat off the bone then add at the end to heat through)
• Onion
• Peppers
• Fresh tomatoes
• Chicken stock cube
• Pesto
• Tbsp of tomato pasta sauce (can use the rest for tomorrow’s dinner 🙂 )
• Generous tbsp creme fraiche

Instructions

STEP 1:

1. Cook pasta in salted water

2. Meanwhile fry onions until soft, then add chicken

STEP 3:

3. Cook for a couple of mins then add rest of veg and fry until the chicken’s cooked through.

STEP 4:

4. Dissolve the stock cube in a little boiling water, then stir it into the chicken with the creme fraiche and tomato sauce, then a spoon of pesto.

5. Add sauce into the pasta and eat! Yum!

Tip: Can add bacon, chorizo, mushrooms, olives, more veg, or parmesan on top… what’s great about this recipe is that you can shove in whatever you’ve got!
