Place the flour in a plastic baggie (it doesn't have to be anything fancy) and add seasoning of your choice.
beat the two eggs in a shallow bowl. Make sure the bowl is large enough to fit a piece of chicken into comfortably.
crush the doritos as small as you can get them and place them in a shallow bowl. I went old school and used a baggie and a rolling pin but a food processor works just as well.
now comes the fun part!
first coat your chicken in flour, followed by the egg and lastly with the crushed doritos.
add barely a drizzle of oil to the base of a baking tray and spread it with a brush. You need just enough to coat it. This is just to prevent it from creating a sticky situation. Alternative you could use baking paper.
then place your chicken on the tray and you're good to go.
bake for 25-35 mins at 180 degrees c, or until your chicken is cooked.
