Recipe: Chicken French

Winner winner chicken dinner! / Serves: 1


  • chicken breast
  • a cup of flour
  • 1 tsp salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon cayenne
  • 2 eggs
  • 1 tablespoon milk
  • 1 pound chicken scallopini (very thin chicken breast)
  • 2 tablespoon olive oil
  • 1 and 4 tablespoons butter
  • Juice of 2 lemons
  • 1/2 cup sherry or white wine
  • 1/2 cup vegetable stock
  • some finely-chopped parsley
  • salt and pepper

Step 1

Mix flour, salt, black pepper and cayenne together

Step 2

Whisk up two eggs and milk

Step 3

Take chicken scallopini (or chicken pounded thinly) dredge in Step 1. make sure chicken is coat with flour both sides

Step 4

Dump chicken into Step 2.

Step 5

Cook chicken in medium heated pan with olive oil and 1 tbsp butter for a couple of minutes per side

Step 6

Making sauce:

squeeze lemon into pan together with sherry and vegetable stock. boil it down to half then add 4 tbsp butter and parcely

Step 7

add salt and pepper if necessary. put chicken back to pan and put sauce on chicken.
