Slow Peanut Chicken

Ingredients

  • serves 4-6
  • 8 skinless chicken thighs
  • 1 large potato, peeled and diced
  • 1 onion, diced
  • 1 clove of garlic, crushed
  • 100g crunchy peanut butter
  • 1 tablespoon plain flour
  • 400g tin chopped tomatoes
  • 1.5 teaspoon ground cumin
  • .5 teaspoon mild chilli powder
  • 1 teaspoon brown sugar
  • 1 teaspoon turmeric
  • 1 tablespoon soy sauce

Method

put the chicken in the bottom of a slow cooker and scatter over the potatoes.

Mix the onion, garlic, peanut butter and flour until well combined.

Slowly add rest of the ingredients and mix well.

pour over the chicken and cook on low for 6 hours or on high for 3 hours.

serve with boiled rice.

You can also cook this in an oven at 180c for 1 3/4 to 2 hours
