Published Saturday, 09 March, 2013 by Rachel

Create succulent, lemony chicken for 4 with this simple recipe!

  • 4 chicken breasts
  • zest and juice of 1 lemon
  • 1 tablespoon clear honey
  • 2 garlic cloves, crushed
  • 1 teaspoon oregano

1. Preheat oven to 190 degrees celsius. Place chicken breasts in a roasting tin.

2. Mix together the other ingredients and heat in the microwave for 1 minute until hot. Stir well and pour over the chicken.

3. Roast in the oven for 30 minutes, basting often. Leave to stand for 5 minutes before serving.

perfect served with tagliatelle or rice!

Nice and easy recipe, but you really do need to baste the chicken frequently – if you just put all the lemon juice on it before you put it in the oven, you'll end up with dry chicken that doesn't taste of much.

Try and keep the lemon juice from spilling off the chicken and onto the tray if you can, it's a pain to clean up once it's burnt onto the tray.

Consider saving a bit of the lemon juice mixture to put on the chicken and rice once it's cooked, to give it a bit more flavour.
