Chickpea burgers

cheap to make, when theres nothing in your cupboards!

Ingredients
- Yourll be needing
- -2 tbsp light olive oil
- -onion, finely chopped
- -200g tin of chickpeas, drained
- -2 tbsp chopped coriander
- -1 egg, beaten
- -1 large potato, peeled, cubed, boiled and mashed
- -2 tbsp toasted sesame seeds
- -4 burger buns
- -1 tomato, sliced into rings
- -1 red onion, sliced into rings
- -4 lettuce leaves
Instructions
Firstly
Heat half of the olive oil in a large saucepan. Add the onion and sauté for three minutes.
Add the chickpeas and cook for another minute.
Place half of the chickpeas and the onion in a food processor. Purée until you have a smooth mixture.
Tip into a bowl and add the remaining chickpeas, coriander, egg and mashed potato.
Mix well, then shape the mixture into four burgers and sprinkle with the sesame seeds to coat.
Place the remaining olive oil in a frying pan and gently cook the burgers on a very low heat, for about five minutes on each side.
Toast each half of the burger buns, then place a burger in each, topping with a tomato slice, red onion ring and a lettuce leaf.
