Ingredients
- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (28 oz) diced tomatoes
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup beef broth
- 1 tbsp olive oil
- Optional toppings: shredded cheese, sour cream, green onions
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until softened.
- Add the ground beef to the pot, cooking until browned. Drain excess fat if necessary.
- Stir in the chili powder, cumin, paprika, salt, and pepper, cooking for another minute until fragrant.
- Add the diced tomatoes, kidney beans, black beans, and beef broth to the pot. Stir well to combine.
- Bring the mixture to a boil, then reduce heat to low. Cover and simmer for about 45 minutes, stirring occasionally.
- Taste and adjust seasonings if necessary. Serve hot, garnished with optional toppings.
