Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (28 oz) diced tomatoes
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup beef broth
  • 1 tbsp olive oil
  • Optional toppings: shredded cheese, sour cream, green onions

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until softened.
  2. Add the ground beef to the pot, cooking until browned. Drain excess fat if necessary.
  3. Stir in the chili powder, cumin, paprika, salt, and pepper, cooking for another minute until fragrant.
  4. Add the diced tomatoes, kidney beans, black beans, and beef broth to the pot. Stir well to combine.
