chilli bean wraps

Ingredients
- 1 pack of tortilla wraps
- 1 onion (red or white) – finely chopped
- 1 tin of chilli beans in chilli sauce (easily found at asda)
- 1 tin of sweetcorn – it is up to you wether you opt for a small or a larger can
- 1 red pepper – chopped and diced
- 1 tbsp oil
- red leicester/ cheddar cheese
Instructions
(serves up to 5-6 wraps)
fry the pepper and onion in the oil until soft over a med-high heat
drain and add the sweetcorn to the pan. Stir often and when hot/ soft, add the tin of chilli beans. Turn down the heat and stir for about 3 minutes to avoid the sauce sticking to the saucepan. While this is cooking, prepare the wraps (if needed) according to the instructions on the packet. The wraps should be limp and not stiff to avoid breaking when wrapping.
grate your cheese of choice into a bowl.
spoon 2 tablespoons of the mixture into the centre of the wraps and sprinkle on the cheese.
