Chinese Peanut Noodles

Ingredients
- Serves 2
- 2 Chicken Breasts – chopped (optional)
- Glug of vegetable oil
- Handfull Mushrooms – chopped
- 1 Onion – chopped
- 4 Tbsp soy Sauce
- 1 Tbsp Peanut Butter
- 1 Tbsp Honey
- 1 Tbsp Chinese 5 Spice
- 1 Tbsp Ketchup
- 1 Tsp dried chili (optional)
- Egg Noodles
Instructions
Heat oil in a large frying pan or wok and add the onion, mushrooms and chicken and fry for 3-4 minutes stirring occasionally.
Add the soy sauce and fry for a further 2-3 minutes or until the onion is soft and the chicken is cooked through.
add the honey, peanut butter, 5 spice, chilli (optional) and ketchup together with 200ml of water and bring to the boil
Reduce heat and simmer for 10-15 minutes or until the sauce has thickened.
serve with noodles cooked as per pack instructions
