Chinese Peanut Noodles

Ingredients

  • Serves 2
  • 2 Chicken Breasts – chopped (optional)
  • Glug of vegetable oil
  • Handfull Mushrooms – chopped
  • 1 Onion – chopped
  • 4 Tbsp soy Sauce
  • 1 Tbsp Peanut Butter
  • 1 Tbsp Honey
  • 1 Tbsp Chinese 5 Spice
  • 1 Tbsp Ketchup
  • 1 Tsp dried chili (optional)
  • Egg Noodles

Instructions

  1. Heat oil in a large frying pan or wok and add the onion, mushrooms and chicken and fry for 3-4 minutes stirring occasionally.

  2. Add the soy sauce and fry for a further 2-3 minutes or until the onion is soft and the chicken is cooked through.

  3. add the honey, peanut butter, 5 spice, chilli (optional) and ketchup together with 200ml of water and bring to the boil

  4. Reduce heat and simmer for 10-15 minutes or until the sauce has thickened.

  5. serve with noodles cooked as per pack instructions
