Delicious and Easy Raisin Flapjack Recipe

This easy raisin flapjack is the perfect quick meal for those that have a sweet tooth.

Ingredients

  • 1.5 cups of oats
  • 6oz of unsalted butter
  • 1/2 cup of Demerara sugar
  • 3/4 cup of raisins
  • 5 Tbls golden syrup (you can use maple syrup or honey)

Instructions

  3. Line a backing tray with parchment paper while leaving enough to go up the sides of the tray.

  4. Add butter, sugar and syrup to a pan and heat, stirring slowly. Do not let the mixture boil.

  5. Once the sugar has dissolved and the butter has melted, take the pan off heat

  6. Add in your oats and raisings and stir until it’s well covered.

  7. Pour the mixture into the baking tray.

  8. Use a back of a spoon to press the mixture into the tray, making a firm, solid layer.

  9. Place the tray in the oven for 35-45 minutes, depending on how crunchy you want it.

  10. Cut the baked dish into rectangles after it has cooled for about 10 minutes and enjoy!

One of the best variations you can do with this recipe is add in different dried fruits instead of just raisins. While raisins are a great addition, adding dried cherries, apricots, or cranberries would be a great replacement. Even jam would really bring some sweetness and tartness to the dish to make it an even more well-rounded baked good.

If you’re looking for more sweetness and want to add chocolate, you can add cocoa powder in with the butter, sugar and syrup, or add bakers’ chocolate chunked up in the batter with your dried fruit. This would make the perfect desert.
