Chorizo Pasta

So simple but so tasty!

Ingredients
- Chorizo is great to have in the fridge as a basic because its so easy to use and keeps for aaages 🙂
- Pasta
- Chorizo sausage (or packet of the sliced stuff)
- Oil
- Onion (chopped)
- Garlic (crushed)
- Diced vegetables (whatever you have although i find that courgettes, aubergines, and peppers work best)
- Creme fraiche
- Tomato puree
- Stirring in some pesto instead of the creme fraiche and tomato puree also works well , or just leave out the sauce all together! 🙂
Instructions
1. Cook the pasta in salted boiling water
2. Meanwhile, fry the onion until soft, then add garlic and chorizo
3. Cook for a couple of minutes before adding the vegetables, and fry until the vegetables are cooked
4. Stir in a spoon of creme fraiche and a squirt of tomato puree. Heat through.
5. Put the chorizo and sauce into the pasta. Eat!
Tips: If you’re struggling for time, whack the chorizo in the microwave for about a minute to cook it and release those tasty juices, then chop it into some cooked pasta/ a salad/ a sandwich.
