Chorizo Rice

Ingredients
- 2 chorizo sausages
- 2 onions
- 2 garlic cloves
- 1 red pepper
- enough rice for 2 people (allow about 150 ml of rice per person) you can use white, brown but basmati works well
Instructions
Start by cooking the rice as per the instructions on the packet.
Meanwhile…chop the chorizo, red pepper and onion to 1cm chunks. Crush the garlic cloves too
Fry in a good glug of olive oil…so the onion and peppers are well softened down and the chorizo is well cooked (about 15 minutes on a medium high heat, if you want to judge the time for when the rice is cooked) There should be lots of lovely juice in the pan…season with pepper – hold on the salt for now, as the chorizo is quite spicy!
When the rice is cooked, ensure it is well rinsed in boiling hot water.
Tip the rice into the frying pan…stir on a high heat, incorporating all the flavours from the onion and chorizo. Serve in warmed bowls with salad!
