  • handful of fresh coriander
  • about 15 cherry tomatoes, halved
  • half a red chilli, finely chopped
  • juice of half a lemon
  • salt and pepper
  • optional:
  • drizzle of balsamic vinegar
  • sprinkle of pine nuts
