  • Set the oven to 160’c (gas mark 3)

  • Sift the two flours and the cinnamon into a large bowl

  • In a separate bowl, mix butter and sugar until smooth

  • Add the egg and mix well

  • Stir in the dry ingredients and mix into a firm dough

  • Lift onto a lightly floured board and knead well until smooth

  • Roll to 5mm thickness

  • Cut into shapes and place onto a greased oven tray

  • Bake in the preheated oven until the biscuits are a light golden colour (about 10-15 mins)
