Coriander & Citrus Salad Dressing

Ingredients

  • 100ml olive oil (vegetable oil is cheaper).
  • 50g / 2oz chopped coriander.
  • 2 cloves garlic, chopped.
  • 1 lemon (could also use lime instead).
  • salt and pepper, pinch of both.

Method

You will need:

blender, x 1 if you have one.

if you don’t have a blender;

knife, x 1.

chopping board, x 1.

mixing bowl, x 1.

mixing spoon, x 1.

cheese grater, x 1 (for lemon zest)

method:

1. If you have a blender, roughly chop the garlic and coriander and grate the lemon zest. Add all this to the blender with the salt and pepper, half the lemon juice and the oil, then combine. Serve as a dressing with your favorite salad.

2. Otherwise chop the garlic and coriander as finely as possible. Grate the lemon zest and then mix this with half the lemon juice and the chopped garlic and coriander in a mixing bowl. Stir in the oil and season to taste. Serve as a dressing with your favorite salad.
