microwave potato whole for 4 mins on each side then when cooked slice and put on an oiled bacing tray and cook for 10-15 mins each side
put chicken on oiled baking tray and cook for about 25 mins
at the same time place all your chunky veg and tomatoes in a baking pan with olive oil and bake in the oven till soft. season everything how you like it. when evrything is nearly ready put the chicken in the veg pan for a few mins so it gets more flavour. serve the chicken on top of roasted veg with potato wedges on the side and maybe a nice sour creme dip. its really nice and looks proffesional coz its very colourful and healthyXXX
