Spongy Muffins With A Hint Of Spam. YUM

Ingredients

  • 10g Butter.
  • 1/2 Red Onion Fiercely Chopped.
  • 200g Plain Flour.
  • 1/4 Tsp Salt.
  • 1tsp English Mustard Powder.
  • 1 tbsp Baking Powder
  • 100g red Leicester cheese, grated
  • 125 ml milk
  • 1 egg
  • 1 tbsp crème fraîche
  • 120g Spam chopped into chunks (reserving a quarter to sprinkle on top)

Instructions

  1. Grease Tray.

  2. Fry Onion In BUtter Til Soft

  3. Sift Dry Ingredents In With Cheese

  4. Beat Egg And Milk

  5. Add The Crème Fraîche.

  6. Add The Milk Mixture And Dry Ingredients Together

  7. Fold In The Onion And Three Quarters Of Spam.

  8. Fill Six Muffin Cases With The Spammy MIxture

  9. Slap Some Spam On Top To Make It Look Hot.

  10. Chuck In The Oven For 20 Minutes.
