Drain the Sun-dried tomatoes and add to a little hot water to soften - set aside.
Fry the onions and garlic in oil lightly until softened.
Add the tin of tomatoes and some puree and leave to simmer. Add the sun-dried tomatoes then sprinkle a little sugar to heighten the flavour of the tomatoes.
Put Gnocchi on to boil.
Cut the mozzarella into 1cm squared cubes and add to the mixture, along with chopped basil. Let the cheese melt into the mixture and continue to stir.
Drain the gnocchi and add to the mixture -
Season and add cayenne pepper.
Serve and place a basil leaf on top for presentation!
