Healthy (!) Microwave Brownie In A Mug

Published Wednesday, 09 October, 2013 by Molly

No added sugar, wheat free, gluten free, high protein brownie for one in under 5 minutes!

  • - 2 tbs almond meal (almond flour)
  • - 3 tbs dutch cocoa powder
  • - 1/2 - 1 tbs honey (i use 1/2, but some i've made it for like it a bit sweeter)
  • - 2 tsp stevia (or another 1/2 tbs honey)
  • - 1 1/2 tbs coconut cream
  • - 1 egg white
  • - 1 tbs chopped dark chocolate or chips
  • - tiny pinch of salt

Mix together all ingredients except for chocolate in a mug until smooth. If you're not averse to raw egg, test a bit of the batter for sweetness. Sprinkle chocolate on top of batter.

place mug in microwave. Because all microwaves are different, start by microwaving for 60 seconds and check for done-ness, then keep zapping for 10 second increments until cooked to your liking. I like mine molten in the centre so i take it out when it's still a bit wibbly in the centre. Keep in mind the dark choc will melt and look like wet batter!
