Indo-persian Rice

Tasty and healthy



  • 1 cup basmati rice
  • 1 medium sized onion sliced
  • 1 1/2 carrot (thin sliced and cut)
  • 2 teaspoon purified butter
  • 1 tablespoon cashew nuts (optional)
  • 1 tablespoon (raisins)
  • 1/4th orange peel (sliced)
  • sugar 3 teaspoon
  • water


Take a cup of water in a vessel

add the orange peel slices

boil for 10 mins

strain in a colander

(this removes the sour taste of the orange peel)

boil rice in a rice cooker or however you do it usually. Keep aside

take purified butter in a pan. Heat the purified butter

add onion slices and saute until translucent.

add 11/2 teaspoon sugar and saute to caramelize

add cashew nuts, carrot slices, orange peel slices and remaining sugar and fry until carrot and orange is cooked.

add the boiled rice and mix well.

garnish with mint leaves and coriander leaves.

enjoy with my east indian chicken green curry.
