Mediterranean Vegetable Pasta

Ingredients

  • 1 small onion
  • 1 clove garlic
  • 1/2 small red pepper
  • 1/2 small yellow pepper
  • 200g tinned tomatoes
  • 1 tsp extra virgin olive oil
  • 80g dried pasta

Method

1. fry the onion for 3 minutes

2. add the garlic

3. add the peppers and cook for 5 minutes

4. stir in the tomatoes and cook over a low heat for 20 - 25 minutes or until thickened

5. cook the pasta

6. add together!

    You put a little bit of oil in before the garlic so that it fries well.
