Right.. Peel your potatoes & parnips and cut them into small-ish bits & boil in a pan.
While they are boiling away cut your onion, spring onion, bacon & crush garlic.
Fry off onion, garlic & bacon( or a mega easy way is to stick it in between 2 bits of kitchen roll & put it in the microwave for 2 mins, it works!)
When potatoes & parsnips are soft, drain them & give them a good mash.
chuck the onion, garlic bacon & spring onion in. put it back on a gentle heat & add in as much butter & milk as you want.. give it a good mix up!
season as you want.
